Baby Corn Butter Masala

It's nice sunny day and we are ready to pack our bags for Summer Vacation. This is the time when we try to empty our Refrigerator because its 15 day long Vacation. Suddenly I found out those sweet little Baby Corn lying in my fridge for a while and it was a time to experiment something new with them. Baby Corn Masala is what we get usually in Restaurants. But how about Baby Corn Butter Masala? Sound good and Tasty too!!!! So, now its time for me to invent this Devilicious Dish. And no wonder, it turned out Simply Delicious. Recipe Goes here...

Yield: Serves 4

Ingredients:
200 grams Baby Corn, (बेबी कॉन)
3 Onions (प्याज)
4 Tomatoes (टमाटर)
25 grams Cashew nuts (काजु)
2 Green Chillies (हरी मीर्च)
45 ml Oil (तेल)
80 grams Butter (बटर/मखन)
Red chilli powder (लाल मीर्च)
Coriander powder (धनीया पाव्डर)
Jeera powder (जीरा पाव्डर)
1/2 tspGaram masala (गरम मसाला)
2 tspKasoori methi (कसूरी मेथी)
1 tsp Ginger Garlic Paste (अदरक लेह्सून पेस्ट)
1 tbspCream (क्रीम)
Salt as per taste(नमक)

Method :
1. Boil the tomatoes, on chopped onion and cashewnuts with green chillies in about 200 ml water. Cook the same and place it aside to cool down.
2. Then grind this mixture in a blender to make a paste.
3. Heat butter/oil in a kadhai and add kasoori methi, ginger-garlic paste and remaining chopped onion.
4. Saute till the onions turn transparent.
5. Add red chilli powder, coriander powder, jeera powder.

6. Add tomato-cashew paste and salt. Cook for five minutes.

7. Check the seasoning and add garam masala, followed by roasted and powdered kasoori methi.

8. Take Baby Corn cut into cubes. Add the cubes to the masala and cook covered for 5 minutes.

9. Garnish with cream.

Rose Barfi

This Rose Barfi is sure to appeal your taste buds. Just relish its sweet and fresh rose flavour without worrying about gaining those extra kilos, as it's not only low in calories and fat but also rich in nutrients like protein and calcium.

Yield: Serves 4

Ingredients:
3/4 cup crumbled paneer,
3 tbsp crumbled mava
2 1/2 tbsp powdered sugar
few drops of Rose essence
2 to 3 drops of red colour

Method :
1. Mix all the ingredients except the red colour in a bowl, add 2 tbsp of water and knead it till the mixture becomes smooth. Add a tbsp of water if required.
2. Divide this mixture into 2 equal portions. Add red colour to one portion and mix well. Keep aside.
3. Spread the white mixture on a greased thali and keep aside.
4. Spread the remaining pink coloured mixture over the white coloured mixture.
5. Refrigerate for at least 1 hour and just before serving cut into 8 pieces.

Tips
1.Variation: Almond Pista Rolls
2.In the above recipe, substitute rose essence for almond (badam) essence. Follow step 1, then divide the mixture into 8 equal portions.
3.Shape them into cylinders and roll them in 2 tbsp of finely chopped pistachios.
4.Refrigerate for at least 1 hour before serving.

Food Tips : Part 1

1. BREAD CUTTING : If the bread is too soft to cut into pieces, hold the knife close to a flame and then slice the bread with it.


2. EGG WHITE : If you need only the egg white, for storing the remaining yolk, cover the yolk with water or milk and keep in a cool dark place. Just drain off the liquid before using the yolk.

3. PASTRY DOUGH : Mix extra pastry dough, to the breadcrumb stage, and store in airtight container in refrigerator. Use as and when required, for simple and quick result. Same dough may be used in a number of tarts, pies, cookies and puddings.

4. PUDDINGS & DESSERTS : Add a little powdered lemon rind to puddings or desserts to avoid the smell of egg.


5. FRENCH FRIES : If you want to make crispy potatoes or banana chips, sprinkle salt water over them while frying.
