Spinach Curd (Yoghurt) Raita

Spinach has a high nutritional value and is extremely rich in antioxidants, especially when we consume it steamed or boiled. It is believed that Curd (Yoghurt) is nutritionally very rich, even beyond milk. This recipe will mix Spinach and Curd which are nutritionally very rich to create a magical tangy flavour.

Yield: 6 servings

1 1/2 cups spinach leaves (पालक)
2 cups curds (दहि)
1/2 green chilli, chopped (हरि मिर्च बारिक कटि हुइ)
2 pinches pepper powder (कालि मिर्च पावडर)
2 pinches of sugar (चिनि)
a little chilli powder (for sprinkling) (थोडा लाल मिर्च पावडर)
salt to taste (नमक स्वाद अनुसार)

1. Steam the spinach leaves for a few minutes (Spinach has its own source of water, so no extra water is required to boil spinach, sprinkle a little water).
2. Squeeze out the water and chop finely.
3. Beat the curds and add the green chilli, pepper, sugar and salt. Mix well.
4. Add the spinach and mix well.
5. Sprinkle chilli powder on top.
6. Serve cold.
